Add diced onion, garlic, and potatoes. Season with salt and pepper.
Place the lid on the Dutch oven until the potatoes are cook thoroughly (at least 30 minutes).
Crack a few eggs on top of the potatoes. Add cheese on top and let it cook, uncovered, until done.
Enjoy this hearty breakfast by the forkful or serve it on tortillas.
Notes
Although Steve makes this breakfast over hot coals at a campsite, you can easily make it at home. Start by heating your Dutch oven on the stove over love-medium heat. Cook your sausage, then add your potatoes. Transfer the pot to the oven and bake at 350-400 degrees F until tender (about 45 minutes). Then add the eggs and cheese on top and return it to the oven until the eggs are cooked to the desired consistency.
